Bimber 2 Year Old London Single Malt Spirit Signature Edition Batch No 1 Bimber distillery began distilling whisky in June 2016 ish and as of June 2019 this Signature edition will be available to purchase, with pre orders available just now, and is a combination of their first fill ex-Bourbon, ex PX Sherry & Virgin American Oak aged whiskies.

This version is the 2 year old giving an indication on how it will be when it is released later this year.

This is a tasty dram, there's elements of youthfulness, with a hint of something sweet with american cream soda, pepper and dark chocolate truffles, this really is tasty and a really interesting dram, with potential for the future.

There will be 1000 bottles of this available at £120 a bottle which I can see as it will be a limited run, but the pricing on this limited edition bottlings from new distilleries is outrageous, and priced not for the actual whisky drinker but for those who intend to buy and either flip it or hold onto it on the basis it will earn them money in the future.

Tasting Notes & Details


Interesting nose straight away theres a dark chocolate truffle note, dusted with ground ginger powder, a touch of sherry soaked dates, a hint of american cream soda and cremola foam, the sweet vanilla of the virgin oak and cask char mix together also.


This starts off really hot, pepper and cinnamon, those dark chocolate truffles are back with the dust of ground ginger powder, theres a touch of vanilla sugar and scraped vanilla pop seeds, the cremola foam is back again also
